Eagle Rub Breakfast Casserole

Ingredients:

1pd sausage

1 fresh onion / chopped

1 can (4oz) chopped fire roasted green chiles

6 eggs / beaten

4 cups frozen shredded hash browns (thawed)

2 cups shredded marble jack or cheddar cheese

1 cup shredded Swiss cheese

1.5 cups cottage cheese

2 tsp Eagle Rub All Purpose Seasoning

Brown the sausage and onion together in a skillet. Drain the sausage. In a large bowl, combine all of the ingredients. Pour the mixture into a greased (I use Pam) 13x9 inch baking dish. Bake uncovered at 350 degrees for 40 minutes. Let it set for about 5 minutes before serving. This is a perfect casserole to prep the night before and put in the refrigerator. In the morning, all you have to do is put it in the oven and drink coffee until it is ready...Enjoy!

Breakfast Boat

Ingredients:

16" to 20" Ciabatta, French, or Sour Dough Baguette / Loaf (3" to 4" wide)

6 eggs

2 green onions

6 slices of cooked bacon or 1/2 pound of cooked sausage

1.5 cups grated marble jack or cheddar cheese

Eagle Rub All Purpose Seasoning

Cut the center out of the baguette or loaf to make a "boat". Don't cut all the way through to the bottom or the egg mixture will leak out. Lightly scramble the eggs until they just start to turn solid. Slice/chop the green onions into very small pieces. Add the onions, bacon/sausage, eggs, and cheese in a bowl and mix together. Fill the bread "boat" with the mixture and sprinkle the top with Eagle Rub All Purpose Seasoning. Place the "boat" on a cookie sheet and bake for 15 minutes at 350 degrees.

 

 

Old Fashioned Pancake / Waffle Batter

Ingredients:

1.5 cups milk

4 tbsp. white vinegar

2 cups flour

4 tbsp. sugar

2 tsp. baking powder

1 tsp. baking soda

1 tsp. salt

2 eggs

4 tbsp. real melted butter

1 tsp. real vanilla extract

First combine the milk and vinegar in a medium bowl and let sit while mixing up the dry ingredients. In a large bowl combine the flour, sugar, baking powder, baking soda, and salt. Now add the two eggs, melted butter and vanilla extract to the milk and vinegar mixture. Whisk this together very well until creamy. Pour this wet mixture into the dry mixture and stir/whisk together until smooth. Heat a large skillet over medium heat. Spray the surface with cooking spray. Pour 1/4 cup servings of batter on skillet. When bubbles start to appear, flip them. We like to add fresh blueberries or chocolate chips to ours!
